bramley apple curd
Makes 2 big kilner jars
900g bramley apple, peeled, cored, chopped zest and juice 4 lemons (200ml juice) 250 butter 900 sugar 10 eggs, well beaten (200ml)
Put apple into pan with 200ml water and zest. Cook until soft then blitz fine. Make lemon curd, add the puree.
