Brioche

  • 36g yeast
  • 60g sugar
  • 60ml water
  • 60ml cream
  • 450g soft butter
  • 3tspn alt
  • 700g flour
  • 12 eggs
  1. Dissolve yeast and sugar —tepid water
  2. Beat into water via machine
  3. Add cream, beaten eggs a little at a time
  4. Prove (cover + fridge clingy) in fridge overnight
  5. Roll 22g balls, prove 10mins bake at 190c for 7mins
