Carrot and Coconut Slices

  • 250g butter
  • 300g light muscavado sugar
  • 1 tbsp vanilla extract
  • 3 eggs
  • 200g self raising flour
  • 50g desiccated coconut
  • 200g grated carrots
  • 2tbsp mixed spice

For the topping: * 85g coconut * 75g butter * 75g sugar

  1. Line roasting tin. Melt butter in saucepan, cool for 5 minutes, add sugar, vanilla and eggs. Beat until smooth with wooden spoon. Stir in flour, coconut & 1/4 tsp salt. Stir in carrot and mixed spice. Bake 30mins. Probably about 180C.

  2. Meanwhile mix the sugar and coconut and butter and sprinkle over the top when the cake is 10min from being cooked.
