White chocolate mousse

  • 300ml double cream
  • 150g white chocolate
  • 25ml water
  • 1tbsp
  • liquid glucose
  • 1 egg yolk
  • 1 leaf gelatine
  1. Soak gelatine
  2. Glucose and water in pan - heat until dissolved
  3. Whip cream in soft peaks
  4. Heat glucose and water until dissolved
  5. Take off heat and add in white choc. and soaked gelatine
  6. Allow to cool
  7. Add yolk, fold in cream. Set
