Choc pots

These are really rich chocolate mousses

  • 700ml double cream / 500ml milk
  • 700g chopped chocolate
  • 10 egg yolks / 50g sugar
  • 5 whites / 50g sugar
  1. Boil milk / cream
  2. Cook sabayon over ban marie
  3. Pour milk over chocolate
  4. Milk into sabayon
  5. Whisk (by hand!) whites and sugar, fold through
  6. Chill
