Cinnamon mousse

  • 250ml single cream
  • 250ml milk
  • 100g sugar
  • 400ml whipping cream
  • 3 gelatine leaves
  • 25g cinnamon stick
  • 4 yolks
  1. Boil cream and milk with cinnamon
  2. Stand for 20m
  3. Mix yolk and sugar until pale
  4. Add cinnamon milk stirring occasionally
  5. Cook out until it thickens
  6. Add gelatine than pass through sieve over ice, when cool fold in whipped cream
