coffee ice-cream (simon hopkinson)

serves 10

1,200ml mlik 150g coarsely ground coffee 10 egg yolks 250g sugar 800ml d. cream

put milk on low heat - add coffee

stir - bring to the boil - let it rise

whisk, cover and infuse for 30min

strain through muslin into a bowl

beat 2g egg yolks and sugar to sabayon, then add milk

mix 2g then pour back into pan

mix to custard. don’t boil

pour into bowl over ice and whisk in cream
