Crème brûlée

  • 3 litres double cream
  • 1.6 litres milk
  • 600g sugar
  • 7 vanilla pod
  1. Boil all of the above
  2. Add 1kilo egg yolk. Pass.
  3. Cook in ramekins on a tea-towel. Ensure ramekins have space around them. Cook on 150 for about an hour. Should wobble when done.
  4. Chill immediately
  5. Sprinkle w/sugar and get your blowtorch out!
