strong w. flour 525 plain flour 525 instant yeast 42g 1 tsp sugar warm milk (or soy milk) 1050 warm water 450 bicarb 1.5 tsp salt 3 tsp sunflower oil
combine flours add yeast mix 2g dissolve sugar in warm milk and pour into flour beat until you’ve got a smooth batter 3-4 min cover and leave 20min - up to an hour mix bicarb and salt w/ warm water and beat into batter add 3/4 water and keep adding until double cream consistency cover and rest 20 min grease mini pan cook on one side only
