Flourless chocolate cake (Bentley's)
I’ve only made these as individual cakes. Use metal moulds!
- 6 egg whites
- 3 yolks
- 200g chocolate
- 60g sugar
- 25g butter, melted
- Pinch of baking powder
- Melt chocolate
- Whisk sugar and yolk to sabayon
- Add to chocolate
- Add melted butter and baking powder
- Beat egg whites with a little sugar
- Fold in
- Transfer batter to a piping bag and chill until ready to bake.
- Bake on 190C for 7/8mins
