Fritter batter

  • 15g yeast
  • 300ml spring water (warm)
  • 15g caster sugar
  • 125g plain sugar
  • 170g self raising
  • Powdered ginger / cinnamon / 5 spice
  1. Crumble yeast in sugar and water
  2. Leave for 10m
  3. Place both flowers and dry goods
  4. Slowly add liquid
  5. Mix for 10m till shiny
  6. Cover with cling film and leave for 2 hours
