Gelato Base

Bianca Base:

1 litre milk 280 cream 80g glucose syrup 260 sugar 80 milk powder 4 gelatine

Heat milk and cream and glucose

Mix milk powder and sugar 2g

Stir the powder gradually into the warm milk mixture

Whisk in soaked gelatine

Chill then add tahini/ground pistachios/ coffee etc
