Iced parfait mix
- 300ml cream
- 250ml sugar
- 4 yolks
- 80ml water
- 2 whites
- Mix water and sugar, bring to soft boil in pan (120c)
- Pour onto yolks while whisking in machine, whisk until cool.
- Whisk whites and fold into eggs. Whisk cream and flavouring and fold through eggs.
- Place in moulds and freeze
