Kumquat Marmalade

Cut about 1kg kumquats into rings and de-pip

  • Vanilla sugar (to taste)
  • Star anise
  • Cardamon pods
  • Orange juice (2 litres)
  1. Put the juice, sugar, spices together
  2. Heat up and gently poach the kumquat rings until soft
  3. When soft, remove the rings and put on a tray to cool
  4. Reduce the remaining stock until jammy
  5. Put the two together
