Lemon tart (French Laundry)

  • 4 eggs
  • 200g sugar
  • 4 yolks
  • 125ml lemon juice
  • Zest of 2 lemons
  • 6oz butter
  1. Make a sabayon with yolks, eggs and sugar
  2. Add lemon juice in 3 stages, whisk until thick
  3. Put in tart cases
