- 200g passion fruit pulp
- 60g egg yolk
- 75g eggs
- 60g sugar
- 75g unsalted butter
- Heat pulp and sugar over a ban marie. Whisk eggs and yolk, then add and keep whisking until cooked and thickened.
- Pass and whisk in cold butter
