Pear chutney

  • William pears 2.5 kilo
  • Spanish onion 360g
  • Salt 10g
  • Ginger 180g
  • Cinnamon 1.5 sticks
  • Nutmeg 2
  • Cayenne pepper 2g
  • Saffron 1g
  • Demerara sugar 900g
  • White wine vinegar 90ml
  • Orange juice 225ml
  • Bramley apple 250g
  • Tomatoes 450g
  1. Sweat onion and spices
  2. Add everything except pear and half the tomato
  3. Cook for 1 hour
  4. Add pears and remaining tomato
  5. Cook for a further 20m
  6. Drain and reduce
