Poached pears

  • 600g sugar
  • 1ltr hot water
  • 3 liquorice sticks
  • 60g liquorice candy
  • 40ml creme de cassis
  • half a lemon
  • 6 pears
  • Mollases
  1. Caramelise 100g sugar
  2. Pour in hot water
  3. Add remaining sugar, sticks, candy and liquorice. Dissolve.
  4. Simmer for 5 mins
  5. Peel pears and poach in syrup
