75g butter 175ml water 1/2 tsp salt 100 flour 3/4 eggs
Preheat oven to 200c.
Combine butter, water and salt in medium saucepan and heat gently until butter has melted. Bring to boil then remove from heat.
Add flour in one go and beat the shot out of it with wooden spoon
Continue to beat until mix comes 2g
Return pan to heat and cook on low - for about a min to dry out dough
Beat in the eggs off the heat, one at a time - only until the mix is shiny and soft
Scoop into piping bag and on to lined tray. Pipe small malteaser sized blobs. 20 mins in oven. Cool on wire rack and pierce so steam can escape.
