- 4 egg whites
- 190g sugar
- 1 tsp vanilla essence
- 1 tsp white wine vinegar
- 1 tsp cornflour sifted
Preheat oven to 200°c (gas 6) Line 23x33 cm baking tray with parchment and grease with oil.
In a bowl, whisk egg whites ‘til stiff. Gradually whisk in the caster sugar a bit at a time ‘til thick and glossy.
Fold in vanilla essence, vinegar and cornflour. Spread evenly on tray and bake for 10 minutes, then lower temp to 170°c / gas mark 3. Cook for 10 minutes more.
Remove from oven and leave to cool for 2-3 mins on tray before turning out onto the 2nd piece of dusted parchment.
