salmon w/soba noodles
Salmon with Soba Noodles and Tahini Dressing (serves two)

You will need: a handful of soba noodles a handful green beans or soya beans 2 salmon fillets For the dressing: 1 spring onion 1 tbsp tahini paste 20ml soy sauce 30ml sesame oil 20ml white wine or rice vinegar a handful of chopped peanuts if liked
Make it! Heat the oven to 200C. Boil the noodles with the green beans for 5 mins. Fry the salmon for a few minutes skin side down, then finish in the oven for a couple of further minutes. Put the onion, tahini paste, soy sauce, sesame oil and the vinegar in a empty jam jar with a lid and shake up. Mix the dressing, beans and noodles and serve the salmon straightaway. Chopped peanuts are nice in it, as are sesame seeds if you have them in.
