Spiced chocolate mousse
- 75g chocolate
- 150g unsalted butter
- 75g cocoa powder
- 4 yolks
- 100g caster sugar
- 200g mascarpone
- Melt chocolate, cocoa powder and butter on a low heat, mix well and cool.
- Whisk yolks til light and fluffy
- Take sugar to softboil (120c)
- Pour onto yolks
- Whisk until cool
- Add chocolate mix to egg mix, add spice, then mascarpone
