Tiramisu

Genoise: * 2 egg * 100 sugar * 60 butter * 75 flour * 10 cocoa * 10 cornflour

  1. Whisk eggs and sugar to sabayon
  2. melt butter
  3. fold into eggs and sugar
  4. Sift in dry goods, fold in
  5. Bake at 210c for 10mins

Filling: * 625g mascarpone * 250 sugar * 625 cream * 8 yolks * 5 leaves gelatine * Kahloa / Tia Maria * Espresso

  1. Whisk cream, whisk sugar and yolks
  2. Fold into cheese
  3. Fold into cream
  4. Dissolve gelatine in coffee and Kalhoa
  5. Add to cream
  6. Mix
  7. Layer up
