Vietnamese dressing

  • 10ml sesame oil
  • 1 small shallot (brunoise)
  • 15g pickled ginger
  • 1/4 red chilli
  • 10g fresh ginger
  • 35ml rice wine vinegar
  • 40ml sugar syrup
  • 10ml light soy sauce
  • 15ml pickled ginger juice
  • 10ml fish sauce
  • Juice of 2 limes
  1. Heat sesame oil — add shallots, ginger, chilli. Add vinegar and reduce by 1/3rd.
  2. Add sugar syrup, soy sauce and pickled ginger juice. Bring back to the boil and simmer for 30 minutes
  3. Take off the heat and add lime juice
