This is a clay-like and intense thing. Cacoa has a bitterness that gets mellowed out by the other ingredients.
Chocolate Tart w/ liquorice poached pears
For the base;
a couple of handfuls of cooked quinoa
a handful of any nuts and seeds
1 tsp sea salt
For the filling;
100g Dark chocolate - 70% blah blah
½ cup Coconut oil/olive oil
3 heaped tbsp nut butter
200ml any milk
1 tbsp molasses
1/2 tsp sea salt
(optionals ½ tbsp of — cardamom/rose water/miso/espresso powder etc)
Blend everything and press it into a tart tin. Bake on a moderate heat for 20 minutes or until you have a crisp base.
Blend the rest of the ingredients until you get a Nutella-like consistency. Pour over the base and freeze for a couple of hours
For the pears;
3 firm pears
1 L water
1 liquorice stick
1 tsp turmeric (or saffron)
a handful of coconut sugar or 1 tbsp honey
Halve the pears then add them to the water with the liquorice, turmeric, lemon and honey.
Bring to the boil, then reduce the heat and add a sheet of parchment and simmer for an hour or so, until they’re tender.
Once done, continue to reduce the liquid until you have a glaze.
